Does anyone know of a shortcut for deleting read headers? I have the message bodies, but not the headers delete when i save attachments, but it'd be awesome if there were some shortcut key to press to delete the headers once i've verified everything.

no such shortcut, the easiest way now is to create the filter:

messages are read, select

and to save the filter;

then, to delete read headers - alt+z (edit menu->apply filter), doubleclick or press enter on the filter and then alt+x (delete [selected] headers).
